Low Fat Vegan No Oil Baked Stuffed Mushroom Appetizer EASY!

We love these!! I have been wanting to share this for some time. I know all of you will enjoy it as much as we do.
These can be hors d’oeuvre, appetizer, or starter is a small dish served before a meal or like us during the meal. They taste good warm and room temp.

7-8 large mushrooms
chopped mushroom stems
1/2 onion (I used red but you can use any kind of onion)
1 C Red, orange o r yellow bell pepper (do not use green)
1/4 t garlic
1 T chopped parsley
1 collard chopped finely (you can use spinach, kale or any other green you want)
1/2 t no salt seasoning.
1 T nutritional yeast
1 T bread crumbs
water for mixing
You can also use vegetable broth if you want but most of them are very high in sodium. I have made it with both water and veg broth and there is not taste difference.
